Emeril's Bananas Foster French Toast

WOW, I turned on the TV this morning at just the right time! I was gonna do some yoga, but when I see Emeril on, I know it's gonna be good. This time it was banana french toast!

MMMMmmmm...it looks and sound delish. I would forgo the heavy whipped cream topping and I would ease up on the sugar and maple syrup. The dish as he prepares it is so fattening it would not matter if the whole thing was made out of fruit! That many calories would completely nil out the benifits of having fruit!! DUuuuuuuuuuuuu...

Ingredients
2 cups heavy cream (optional)
3 large eggs, beaten
¼ teaspoon vanilla extract
¼ teaspoon almond extract
6 tablespoons sugar
2 tablespoons ground cinnamon
8 slices brioche or other sweet light bread
1 stick (8 tablespoons) unsalted butter 4 ripe bananas, sliced in ¼-inch rounds
1 cup raisins soaked in rum for one hour
½ pint heavy cream, whipped (optional)
Syrup, for serving, optional


Directions
In a large bowl, combine the cream, eggs, vanilla and almond extracts and mix well. In a smaller bowl, mix together the sugar and cinnamon. Dip the slices of brioche in the cream mixture briefly and use half the cinnamon sugar to sprinkle both sides.
Melt 2 tablespoons of the butter in a large frying pan. When the butter is hot, add half of the bread slices and cook on each side until golden brown. Remove from the pan and set aside, loosely covered, while you repeat with 2 additional tablespoons of the butter and the remaining bread slices.
Heat the remaining 4 tablespoons of butter in another frying pan. Sprinkle the bananas with the cinnamon sugar, add them to the pan and cook until the bananas are caramelized.
Place two slices of French toast on each plate, and pour the bananas and raisins over them. Top with whipped cream and syrup, if desired. Dig In!
Yield: 4 servings

I did get some yoga done, but this CD had a spider pose which I could not do! I was surprised when my body would not move! The instructor on the DVD says this is a good one for strengthening week arms...and I am thinkin...HOW when one cannot even do the pose! *face-palm!* Yoga just isn't for larger people-but I do my best anyways.

  1. Saw some of your videos on youtube. I'm trying to acquire a spinning wheel and found them very informative. None of my friends knit or spin (I live in Houston, TX-not a big demand for wooly things) so I don't have a support system down here. Not too many places to by fleece or roving so most of my purchases are via internet. I'm a visual learner so the vids help out tons.

    On another note, I'm rather large myself and have given up trying to do yoga. I just can't bend that way. :)

  2. Sweetness! Nice to meet your aquantince! I too am a visual learner. I've bought some nice stuff from Split Rock Ranch off Ebay. Since I am so far nort, we have plenty of local farmers with stock to buy from.

    I haven't given up yet on yoga! Doing karate has increased my flexability, now I just need to find a system where I can increase it even further and increase my balance. So I am renting Yoga Just my size for larger folks from Netflix.

  3. You both should check out my Chakra Blah Blah blog, because I did a post regarding a yoga DVD I got from Amazon. Yoga: Just My Size With Meghan Garcia.

    Also, I know there are some older tapes out there called "Yoga For Round Bodies. But this DVD is modern and good.

    Additionally, never underestimate the use of props in a yoga practice. Whether it be yoga blocks, straps, or even a folding chair. In Iyengar yoga the emphasis is on doing the asanas correctly, not to rush through a series of postures, but to be mindful about it and aware.

  4. Let me know about the yoga video. I'll check out SRR's stuff. There are a few places on the net I've been checking out since I took a drop spindle class but I haven't bought anything yet. I'm bidding on a wheel right now on ebay so keep your fingers crossed for me.
